Commis Chef

Position Title: Commis Chef Contract Length: 8 months on/2 months off Privilege Level: Crew Hours Per Week: 70 hours minimum (10-12 hours per day, potential overtime) Benefits: Limited coverage for illnesses/injuries, death benefit for dependents Berthing: Shared with 1-3 roommates Travel: DCL organizes and pays for travel Skills Test Requirement: Not Required Guest Contact: Low Required Footwear: 1 complimentary pair of black safety shoes upon embarkation

Reporting Relationship:

  • Reports to: Chef De Cuisine
  • Direct reports: None

Top Job Responsibilities:

  • Follow recipe standards, correct usage and care of equipment, proper storage, and stock rotation
  • Prep and peel vegetables, slice cheese, prepare salads, collect pots and pans, and perform general culinary duties
  • Rotate through various galley sections bi-monthly
  • Clean and sanitize work station according to USPH standards

Experience & Qualifications:

  • Minimum one year experience in a high-volume professional kitchen
  • Formal culinary education preferred
  • Ship experience a plus
  • Flexibility to work in any kitchen section and rotate positions, including cold prep rooms
  • Hygiene certification preferable
